Ayran



Ayran is a delicious yoghurt based drink that is still wildly popular in Turkey. Not only can it be found in the markets and along the roadsides across the country it is also available in fast food outlets such as Macdonalds as well as pre-packaged in grocers. There's nothing quite like Ayran for a refreshing summer drink either alone or with food.

It's simplicity itself to make.

Ayran

3 cups good whole yoghurt (sheep or cow)
2 cups skimmed milk
3 cups Water
1-1 1/2 tspns salt.



Add all the ingredients to the magimix with the pastry blade inserted. Mix until frothy.

Serve immediately in tall glasses (with or without a sprig of Mint)..

You can also add cucumber juice (but the young man doesn't like this). The juice of 1/2 cucumber supports the above quantities.

(To juice a cucumber chop it into manageable chunks and liquidise it with your weapon of choice. Strain through muslim).
